John Mautone and Michael Waterhouse, the owners of the sleek steak house Dylan Prime, opened a more casual 10,000-square-foot pub-style eatery in TriBeCa in July. Architect Chris Smith of CMS Design (who is also designing Gray Kunz’s new restaurant Grayz) designed the space, and executive chef Christopher Dunn created the menu.
